Château Pavie Description
Starting with the 2005 vintage, Château Pavie officially announces the release of a second-label wine under the name of "Arômes de Pavie” which replaces "Château Tour Simard ” because it would be easier for our consumers to recognize this wine among Perse's range. Principally from young vines that are less than ten years old, the final blend also contains numerous barrels that were remaining following the severe selection that is practiced for the first wine. The same care and attention goes into the production of this wine as to Pavie itself.
Geological Characteristics: Château Pavie has diverse terroirs...
- Terroir typical of the Saint-Emilion limestone plateau composed of clay-limestone soil on an asteriated limestone subsoil. Located at an altitude of approximately 85 meters above the Dordogne River.
- Terroir called « milieu de côte » (middle of the slope) located approximately 55 meters above the Dordogne and composed of very fine brown limestone.
Viticulture: Many plots have been re-planted. The vines are trained high to increase the leaf canopy. Pruned to six spurs for old vines and two for young ones, green harvesting leaf thinning, as well picking and sorting by hand.
Vinification: The way Château Pavie is fermented depends on the vintage. It is kept on the skins for three weeks in 20 temperature-controlled wooden vats. Malolactic fermentation in barrel and the wine is aged, depending on the vintages in 70% to 100% new oak, for 18 - 32 months.

"This 2016 Pavie displays a purple color that continues to express its full force and liveliness. The complex aromas of sun-ripened black fruit are lush and clean, with ripe notes of fresh blackberry jam instrumental in defining the wine's brisk style. The aromatic generosity and density is a model of mastered concentration.
Black fruit on the palate makes a supple first impression before becoming firmer and more serious, with tight and delicate tannins.
The wine's structure shares the character which gives the greatest vintages of Pavie the ability for long aging. There's a fine balance in its expression of ripe fruit and the subtle oak which contributes smoky notes across the aromatic palette. The wine is a union of richness and freshness; in the mouth and through the retro nasal passage, its aromas declare that this is a wine that's got everything! This vintage strongly declares its personality with its concentration and extraction. One of the greats which will still be notable in 20 years and beyond." -David Biraud
Wine Enthusiast: 94 Points
"The second wine of Château Pavie is dense with dark tannins and superripe fruit. Bold and concentrated it still highlights the fruitiness of the vintage. Although it has big tannins and great potential, the wine also shows plenty of freshness. Drink from 2024." -ROGER VOSS
